I was
never much of a courgette fan. But since I tasted this soup, I can’t get enough
of it. It’s green tasty and healthy.
Ingredients:
400 gram
potatoes
1 ½
courgette
1 union
1 garlic
glove
¼ red
pepper
1 ½ vegetable
stock cube
1 tsp. vegetable
oil
Start cooking:
First
you should chop the onion and press the garlic. Then before you chop the red
pepper finely you need to remove the seeds. Now you just have to slice the
courgette and chop the potatoes into little pieces. Don’t forget to wash them
first!
Now boil
1 litre of water in an water boiler or kettle. Heat the vegetable oil in a
stock pot and fry the onion, garlic and red pepper for 2 minutes. Add the
courgette and the potatoes and after 2-3 minutes you can crumble the vegetable
stock cube over the pan and add 800 ml off boiling water.
Let it
boil for 20 minutes. After 20 minutes the potatoes are soft and you can puree
the soup.
